Every step of the winemaking process, from gentle handling of the grapes to small-lot fermentation, is devoted to preserving the quality, flavor intensity and power of the fruit. Annually, Jarrah and the Saint Clair team blind taste wines from each lot, scoring and ranking which are the best, highest-quality wines. Only lots scoring in the top 10% are considered for Origin Series Sauvignon Blanc.
